Hey how you guys doing? anyone know any good menpachi soup recipe? and also how to prepare opihi? thanks!

Opihis raw with hawaiian salt opihi limu green onion snd a splash of shoyu,

menpachi head/bones only

Tie in cheese cloth. Boil for 30min. After, remove cheese cloth (no bones) and reduce 25%. Add grated ginger, pinch hawaiian salt, add one part red and one part white miso (to taste, but gotta use both). You can crack an egg in the broth (but this is up to you). Slice a soft tofu (1-1/2" chunk) and stand in bowl. Pour broth around tofu (looks nice).

I like to use this with moano heads, poopaa heads, and aweoweo heads too...

MENPACHI MISO SOUP

clean all your menpachi and start boiling somewater . . . .
put miso paste and put menpachi in cheese cloth and put it with the miso to cook, then when the fish can break up easy off da bones put the meat in the soup and u can also add an egg if u like ....ONO on a cold day . . .

Opihi is best fresh raw mixed with whatever ingredients you like, as in poke. I like to make it lomi style too (last made over 5 years ago :cry: ) Hard to get opihi on Oahu w/o buying it.

Note to self, give yogi menpachi...
